Kohlrabi Salad

Hot summer days are all about quick meals that don't ask you to breeak into a sweat. A splash of rice vinegar and this salad is dressed and ready to go. The reds and oranges of the tomatoes combined with the parsley add balance, flavor and color.

Ingredients:

2 - 3 kohlrabi
1 t rice wine vinegar, or to taste
1 t Chive Blossom vinegar, or to taste

1 pint halved cherry tomatoes
1 bunch flat parsley

Peel kohlrabi, and slice it thinly.

Place in salad bowl with the halved tomatoes.

Add chopped parsley.

Add the vinegars and salt or pepper, if desired, then taste and adjust if needed.
