These muffins will keep you going through frosty mornings and chilly afternoons.
1 cup rolled oats
2/3 cup apple cider
1/3 cup oil
1/2 cup maple syrup
1 1/2 cups grated carrot
1 1/2 cups grated apple
1 1/4 cups flour
2 t cinnamon
1/2 t salt
1/2 t ground ginger or 1 T grated fresh
1 t baking soda
1/3 cup chopped walnuts or pecans
1/3 cup dried cranberries
Preheat oven to 400 and line a muffin pan.
Mix the oats and cider in a bowl and set aside.
Whisk together the eggs, oil, and syrup.
Mix the flour, salt, cinnamon, ginger and soda together.
Add the soaked oats and grated carrots and apple to the egg mixture, stir, then fold in the dry ingredients.
Fold in the nuts and cranberries, and then soon into the prepared muffin pan; the cups will be quite full.
Sprinkle each muffin with a little maple sugar, then bake for 23-28 minutes.
