Fruit & Nut Bars

Make your own delicious, protein-packed, portable bars.

Ingredeints:

1 cup whole nuts, such as walnuts, pecans, cashews, walnuts, pecans, almonds or pistachios
1 cup roughly chopped nuts (use chocolate-covered here for an extra special streat)
1/2
 cup dried cranberries
1/4 cup finely chopped apricots, figs, dates, prunes or Berry Mix

1/4 cup sunflower seeds
1/4 cup pepitas
pinch of salt, unless you used some salted nuts
1/2 cup honey

Preheat oven to 350.

Prepare an 8” square baking pan with parchment paper.

Place all the ingredients into a large bowl and mix thoroughly.

Transfer the mixture to the prepared pan, and press the mixture down into one even layer.

Bake 30-40 minutes, or until the nuts start to brown.

Cool the bars in the pan completely before transferring to a cutting board; cut into bars.

Will keep in the fridge for up to a week, wrapped, or freeze for longer storage.
