With two tasty options for easy falafel, spend a little extra time making your own flatbreads from pizza dough and enjoy something extra special.
Split one thawed pizza dough into 6 pieces and roll into individial balls; let them come to room temperature.
Choose your falafel and prepare it according to the directions on the package.
Ready your fillings: chopped cucumber, cherry tomatoes, romaine, pickled red onions, Gratitude Kraut, whatever you like.
Roll out each small pizza dough ball as thin as you can.
Brush one side with melted butter, or melted garlic butter.
Place one flatbread, buttery side down, on the hot skillet. Cook for 1-2 minutes, until bubbles form and the bottom is golden brown.
Flip and cook another 1-2 minutes.
Remove to a cooling rack and repeat with the other flatbreads.
Spread some hummus on one side of each flatbread, then load with veggies, falafel, sriracha or tahini dressing, fold and enjoy.
