celeriac waldorf salad

A classic recipe, utilizing seasonal produce.


1 head celeriac
2 applesĀ 
1 cup chopped walnut
1 heaping 1/2 cup of raisina
3 T goat milk skyr or palin yogurt
1 T vinegar

2 T mayo
salt and pepper

Chop the celeriac and apples into 1cm chunks or matchsticks.

Add walnuts and raisins.

In a small bowl, mix together the skyr, vinegar and mayo.

Toss the cut celeriac mixture with the dressing, add salt and pepper to taste and enjoy.
