Shrubbly founder Matt Sayre knew he wanted to grow a perennial fruit, and then create a shelf stable product from that. Enter the aronia berry (again!). What starts on a shrub at his Hinesburg, VT, farm, is incorprated into a sparkling version of a drinking vinegar... also called a shrub. Shrubs were popular in the 19th century as a means to preserve fruits, and then, all but disappeared as refrigeration became the norm. Today Shrubbly brings back that organic cider vinegar goodness, but with added carbonation.
