Burlington-based Vermont Marshmallow Co. began when Alexx Shuman was home for the holidays and made some marshmallows with her mom. Although she had made marshmallows in culinary school, this time they sparked a new feeling of excitement. Alexx spent the next 72 hours devising recipes for 3 marshmallows and launching her business.
Rather than mass-produced, rubbery marshmallows, Alexx aims for "pillowy as heck" moments of childlike wonder, with no preservatives or dyes, and made fresh daily.
