This is a very mild and silky cheese, made with goat milk and Jersey cow milk. It has 2 thin layers of ash and an ash coated geotrichum/p.candidum rind.
Store in the refrigerator.
Mold may appear on the outside of the rind; this is normal and the cheese is still safe to consume.
