These thin skinned potatoes have a red skin as well as red flesh. They taste earthy and sweet and their fluffy texture absorbs flavors well.
Store in a cool, dark place.
I baked a purple gratin using these potatoes: garlic, gruyere, 1/2 and 1/2 with a little nutmeg and white pepper and salt. These potatoes are delicious and just a tad different.
Simple and delightful, these red potatoes hold their shape when cooked, unless cooked for extended periods of time.
