If these fruits are firm when you receive them, simply let them sit at room temperature for a day or two to fully ripen.
These were juicy and so delicious. Just rinse and devour :)
An orchard with a few varieties of peaches allows for an extended harvest season! These peaches will be one of the following varieties: Garnet Beauty, Contender, Coral Star or White Lady.
Bill and Andrea at Champlain Orchards have been working hard for a number of years to get their peach orchard established. Every spring is different, and can effect the peach yields dramatically. Some years when we get a late frost, all the blossoms could get zapped resulting in a minimal peach crop. When we're lucky enough to get peaches, it means the spring was mild without any late cold snaps.
Note on Organic v Ecologically Grown - because of the proximity of other non organic (but Eco Certified) crops some peach varieties cannot be certified organic. Champlain Orchards does not use chemical pesticides.
