Organic Spaghetti alla Chitarra

"Guitar" in Italian, chitarra is a traditional square-cut spaghetti from the Abruzzo region of Italy. It is rolled out on a rectangular wooden frame with wires stretched across it, similar to the strings of a guitar. This pasta is an exceptional vehicle for delivering flavor - sauces cling to all four sides. Don't forget to sprinkle grated cheese and a drizzle of extra virgin olive oil on top!

Spaghetti alla chitarra pairs well with any sauce, but the classic would be a red sauce with beef or lamb meatballs. Or try your hand at making cacio e ova (balls made of cheese, egg, and bread, an Abruzzo region specialty). Cooking time is 12-14 minutes.

This pasta is amazing. First of all there is only one ingredient. Secondly, it has ridges in the spaghetti that absorb the sauce and becomes very tasteful. As an Italian girl growing up with parents from Italy, this is the best pasta!!!
