A very special, limited issue Maitake Soy Sauce, brewed from locally foraged mushrooms that were hand picked during the 2021 season. These were blended with Moromi's organic soybean and wheat koji into a sea salt brine and then barrel fermented at the workshop over the past year. The maitake mushrooms really amp up the umami flavor resulting in a super rich and delicious soy sauce!
