Celeriac has a celery flavor, and is texturally akin to other root crops like beets and carrots.
Celeriac looks like a potato but is actually in the celery family. It is a wonderful low starch vegetable that has a tough, furrowed, outer surface which is usually sliced off before use because it is too rough to peel.
Often used as a flavoring in soups and stews; it can also be used on its own or mashed with turnips or potatoes. It is also wonderful raw, grated into salads or slaws.
Store in a plastic bag in the refrigerator.

Smaller than what you'd find at the supermarket and much less gnarly on the tops, these celery roots are easy to peel and add to soups, roast with veggies, or simmer with broth and parsnips to turn into a puree.
