Beet greens are the top of the beet root, often harvested before the beet root is fully developed. The flavor is similar to chard, with a bit more crunch. When they are young, their stalks are crisp and the leaves tender. More mature beet greens are equally delicious, but the stalks may be slightly more tough, easily remedied with a quick sautee.
