Organic Adolescent Red Russian Kale

One of the most versatile vegetables of all times, Red Russian Kale is highly nutritious, with dark green leaves and light purple stems. This variety has a nice delicate, almost nutty flavor, and the coloring is quite stunning too.

Storage Tips

Store in a plastic bag in the refrigerator.

Jericho Settlers Farm, Jericho, VT

The leaves are flat and scalloped, similar in shape to a large oak or arugula leaf. This variety is more tender, delicate and sweet than it's curly kale relatives and is one of our favorites.

These Yellowed in four days. Had to compost. Also they were so thin that they didn't really have much flavor or taste. It might have been a bad batch but not organic quality.

I adore kale and these bunches are exceptional. The leaves are very tender, almost feathery. I usually strip the leaves from the stems, thinly chop the stems (don't waste these crunchy, sweet guys) and either enjoy this kale raw or cooked. Try sizzling the stems with onion in olive oil and then adding the chopped leaves, along with some anchovy, garlic, golden raisins, and toasted pignoli. For a raw salad, try tossing the thinly sliced leaves and stems with olive oil, fresh lemon juice, diced avocado, and grated Pecorino cheese (chopped dates and feta is another great salad combo.)

A very hearty kale with meaty stems. After stemming the leaves, the stems are worth peeling and boiling before chopping up and throwing into stir fry with the leaves. The stems are very sweet!

Wow, this is the BEST KALE EVER. I am no stranger to kale, and my usual prep method involved adding lots of flavor (garlic, balsalmic, onion, red pepper flake, etc). But this kale needs absolutely nothing. Not even salt. Really amazing stuff!
