These beans were great in the Cook's Illustrated "quick" New England baked beans recipe. After cooking for 4+ hours, they held their shape and still had a satisfying, almost creamy texture in the center. If you're a dried bean fan (or even if you're curious to try them) give these a try! Best part is you don't need to soak them for as long as you would conventional grocery store beans since they're a bit fresher than what's typically on the shelves.
This is an heiloom variety that has been successfully brought back into production from some seed saving families in Maine.
