A creative take on a pantry staple, we know that pinto beans are delicious mashed and refried, but this dish allows for adding your favorite herbs and vegetables and serving in a variety of ways. Cook and mash the beans, mix them with cilantro, onions & peppers and bake or fry them to perfection. They can be served as finger food with a dollop of whole yogurt on top, rolled up in a tortilla or added to a salad. For some added fun, make your own salsa bar with homemade tomato salsa, Fiesta Roja, shredded cheddar cheese, and chopped cilantro, jalapeno, radishes and onion.
