Parsnip Apple Goat Cheese Tart

Parsnips pair deliciously with apples, and while often in a soup or a tray of roasted veggies, this tart is a fun and savory way to mix it up. You can buy a crust or make one up to two days ahead with all purpose flour, butter and an egg. Heat it up at 350 degrees for 10-15 minutes while you begin working on the filling: thinly slice the parsnips and apples and whisk together four eggs, a half cup of milk and a half cup of goat chevre. Arrange the parsnips and apples in the crust (this can be as simple or as decorative as you like) and then pour the egg mixture over it. Bake for 20-30 minutes or until the top is golden brown. Serve with a warm kale salad and a glass of apple cider.
