Ingredients
pork, pork fat, water, ginger, salt, maple sugar, garlic, sage, black pepper.
Snug Valley Farm, North Haverhill, VT

Jacob of Artisan Meats of VT makes this sausage for Snug Valley Farm, our pork supplier in Hardwick Vermont. Ben at Snug Valley raises his pigs outdoors on pasture supplemented with grain and whey. This makes for very flavorful and nicely textured meat.
This sausage is not linked so it can be shaped into patties.

This is amazing for sausage and biscuits. To someone else's point, we also struggle to not overeat when this sausage is included. I keep meaning to branch out to other dishes, but sausage and biscuits are so amazing with this sausage as the star.

The last batch we received seemed to have gone bad after a few days in fridge: looked grayish on outside and did not smell right. FTY and the farm may or may not have been responsible - could be we, the customers, that might not have refrigerated it soon enough? Anyway the first time we ordered this sausage, it was tasty and good.

I cannot keep this sausage in my house. It's so good that two of us have to try really hard not to eat it in one sitting. Definitely my favorite sausage ever.

This sausage is delicious! It can be used as a crumble in a stuffing or other recipes...and it makes great patties! There was very little fat drippings in the pan after cooking...all of the flavor stays in the sausage. The spices are nice, and not overly spicy...just right!
