Healthy animals result in healthy food. The heritage pigs of Snug Valley spend most of their lives outside on lush pasture. They have lots of room to roam, eat and play, as well as wallow and root, as only pigs can do. They get about 30% of their nutrition from fresh grasses, and the rest from high quality grain feed, a balance which is optimal for an active pig.
The result of all their activity, exercise and fresh air is some of the best tasting and healthiest pork anywhere. I was never a big pork eater growing up because it was so dry and bland. This pork is tender, moist, and a dream to cook, unlike industrially raised pork. And it also goes without saying that this pork is free of additives and so nutrient dense that the flavor is… an epiphany!

As usual, these are OUTSTANDING sausage from Snug Valley Farm. As brats, they're on the mild side, but full flavored. But thing that gets me is that beyond the spices/herbs, the flavor of the pork is palpable as well. I'm not used to pork that, itself, has flavor. I had never encountered that before getting some pork chops from here to cook up. I'm used to thinking that pork was bland flavored. Not so. The pork has that richer flavor that is akin to turkey or duck versus chicken (although chicken, particularly the dark meat, from Misty Knoll certain has flavor, the turkey is further flavored).

So the flavor of this sausage is added to by the relatively fuller flavor of the pork itself.

Furthermore, the texture of these sausage is really meaty. I have yet to be disappointed by sausage from Snug Valley. The relatively most bland variety is the salt & pepper, as there's not a whole lot of complexity, but, if you have never tried any of their pork sausage, I highly recommend giving one of their varieties a try.

Snug Valley Farm has the best pork. My partner loves bratwurst; these are a real treat. (My favorite is the kielbasa & hot Italian, which really just speaks to the difference in our personal backgrounds. Snug Valley Farm does all pork sausage expertly, in my experience.)
