Pak Choi is a crisp Asian Green with a succulent, sweet flavor similar to cabbage.
These are young and therefore quite tender and the translucent white stalks delightfully crisp. The combination add texture and subtle sweet flavors to a dish.
When young, baby pac choi is so tender it is delicious raw. The larger heads are great steamed with lemon, in soups, or sauteed with a spicy ginger sauce as part of a stir fry. It can be used in place of napa cabbage in some dishes, but due to it's more tender nature please shorten cooking times.
Store in a plastic bag in the refrigerator.

I love how fresh the bok choy were. Some of them were not as full as what I get in Chinese grocery stores, but that was fine. Would be nice to get a larger portion for the price, but it is hard to get organic bok choy in stores.

LOVE the Pac Choy. We have gotten it twice now. I stir fry them in soy sauce and ginger. Really really good, sweet and tender. Cut the leaves from the bulbs, cut bulbs in half, stir fry first and then add the leaves when almost done so they don't overcook.

Fabulous flavor and very tender. I stir fried them with soy sauce and ginger from the Cook's Illustrated All-Time best Asian recipes magazine. The recipe called for Bok choy which is larger, so adjusted my cooking time. I have made it twice now, My Family really loves it!

The pak choy has been inconsistent some weeks, they are large and full, but this seasonal vegetable came in rather feeble bunches this past week. I take chances because it's hard to find organic pak choy. So I hope the farmers will not try to stretch the vegetables beyond their peak.
