Sunshine kabocha is beautiful and delicious. Smooth, tender, flesh is sweet, bright orange, and excellent for baking, mashing, and pies.

This might be my new favorite vegetable from FTY. It was enormous- maybe 6 or 7 inches round, and I couldn’t cut it. I microwaved it for 7 minutes and then was able to cut it in half. I cut 1/2 into slices, brushed with butter and cinnamon sugar and air-fried them for about 20 minutes. The other half I put in my instant pot. That one came out well for a mash or for soup, and the air fried ones were crusty and soft inside. Both were sweet and delicious.
I also put some shishimi togarashi on some of the slices and put that into my ramen that I also bought from FTY. It was so tasty-sweet, savory and a little spicy. By the way, eat the skin. It is delicious and nutritious!!
