Grass Fed Lamb Rib Chops

These rib chops are cut from the rack of lamb. They are small in size but very big on flavor. Lamb is graded on the basis of fat cap, and rib chops tend to have more fat than other cuts, resulting in incredible flavor and quick cooking. Each package contains four chops and as always with lamb, a little goes a long way.
Enjoy within 5 days or freeze for later use.

Storage Tips

Farmers to You orders Tamarack Sheep Farm lamb by the whole animal and it arrives fresh to us every time it's ordered. On weeks when we receive a fresh lamb delivery you will receive cuts that are fresh, not frozen. On weeks when we do not receive a new order your lamb will be sent frozen to stop the aging process. Lamb begins the thawing process while en route to you and can continue the thawing process in your fridge and enjoyed within a week. Tamarack lamb can be refrozen if desired. To thaw meat that has been frozen, place in a sealed bag in a bowl of cool water. Allow at least a day to thaw your lamb prior to cooking. Ben and Grace are committed to their Tunis sheep. They graze exclusively on grass, and are outside on pasture most of their lives. They are healthy and strong animals content to be eating what sheep like most – lush grass all day long! They are also like family – Ben inherited the flock from his great uncle and it is one of the oldest continuously tended Tunis flocks in the country.
We are very lucky to have this lamb from Ben and Grace. They only have three customers including Farmers To You, and the other two are well known restaurants in Cambridge and Vermont. This is easily the best tasting lamb I’ve ever had, but don’t take my work for it – give it a try for your next special occasion, or when dear friends come to visit.

delicious...WAY WAY WAY too many huge chunks of fat...delicious but could get 4 chops with less fat for the same price

Two of us split these lamb chops for dinner and they were extremely tasty. We seasoned (salt, pepper, thyme, rosemary, garlic, lemon), then browned on the stove top and oven-roasted to medium rare.

There's a decent amount of fat on the ribs. We ate that along with the meat and two chops were plenty of food for two of us. If you've got picky eaters who will cut off the fat, you'd definitely need two per person.

They're moderately sized, but they're HUGELY flavored. I love that they're local and produced humanely and relatively naturally. And I love that they're not flown in from New Zealand in terms of environmental concerns.

These chops are very rich and dense, so it's possible that, if you had other filling side dishes, you could get away with one package per two people. But I'll also say that I bought two packages. The chops were larger in one package than the other two. I think the smaller chop size might have been skimpy as the sole protein in the meal, whereas the chops in the other package probably would have been fine. Given the fat and a little bone that comes with these, you might want to opt with 2 per person. That gets expensive, but what a treat!

And most steak connoisseurs, they'll go for a ribeye over a tenderloin. Compared to the loin chops, the rib chops are the equivalent of the ribeye.
