My first time cooking polenta and it came out great. The suggested water to polenta ratio is good (this is key when cooking polenta).

I will add to the instructions and say that you want to bring the water to a rolling boiling before adding the salt and polenta to the pot, but then turn the heat down VERY LOW, cover, and stir every 5 minutes while it cooks. The instructions on the bag say to let it cook for 15 minutes while an online recipe I was following said 30 minutes. I found that it was done by about 20-25 minutes, but an extra 5 minutes didn't hurt.

The recipe I was following also added some cream at the end to thin it out and help keep it from immediately hardening when you transferred to a plate/bowl. So this probably explains the conflicting cook times between the package and recipe.

This was really, really good, especially with some added butter and Parmesan cheese. I served osso buco over it, but even the plain polenta leftovers were good enough to eat on their own.
