Store beets in a plastic bag in the refrigerator.
Enjoy the incredible sweetness of the beets roasted, boiled, hot or cold. The coloring fades slightly when cooked, but can be minimized by adding a splash of lemon juice or vinegar to the cooking water. For the most brilliant effect, thinly slice into disks, semicircles or matchsticks, toss with some salt and lemon juice and add to a salad.
