Native to the mediterranean, the leaves are mild and tender during the cool season and as the weather warms up the leaves take on a more peppery flavor which add a delightful accent to a meal. Here in Vermont our summers offer a range of temperatures, often fluctuating from 50 degrees in the evening to above 80 in the heat of the day. These temperature swings contribute to the depth of flavors throughout the season. Now cultivated worldwide, it also grows wild in mild climates such as California.
Pete's Greens of Craftsbury Vermont are experts at growing early vegetables in their greenhouses. They always get us started early before the field crops have even broken through the sleepy soil.

Crazy how after eating arugula all these years from a supermarket, you learn it is nothing like the real arugula from a farm....

This arugula is really fresh and dark and crisp (not wilty). I warmed/wilted it in a butter substitute in the frying pan for just a minute and it was delicious with an omelette.
