Cauliflower, Apple & Ginger Soup

1 Tablespoon oil 

1 Medium/ large cauliflower

1 Apple (cored)

1 Small white onion

3 Cloves of garlic

1 Inch fresh ginger, peeled and chopped

¼ Cup nutritional yeast (optional)

Salt and pepper


Heat the oil in a large pot over medium heat.

Roughly chop your onion, garlic, and fresh ginger. Add to the pot and sautée for 5 minutes.

Roughly chop your cauliflower and apple. Add to the pot and let cook for 5 minutes.
Add enough water to just cover the contents of the pot.

Cover and let simmer until the cauliflower is soft (about 15 minutes).

Strain the contents of the pot to separate the liquid from the solids. Add the solids to your blender plus 1 cup of the liquid and blend until smooth. Slowly add the rest of the liquid until you reach the desired consistancy. Add the nutritional yeast (if using), salt and pepper.
