Leigh in JP inspired us on Instagram this week with her photo of waffles w/buckwheat & almond flours, yogurt, berries. Here is her recipe (adapted from the Joy of Cooking):

Ingredients
- 1 cup buckwheat flour
- ½ cup almond meal
- ¼ cup all purpose flour
- 1 T baking powder
- 1 T sugar
- ½ tsp salt
- 3 eggs beaten
- 1 stick melted butter
- 1 cup milk
- ½ cup water
- toppings: yogurt, berries
Instructions
- Preheat waffle iron
- Whisk together flours, almond meal, baking powder, sugar and salt
- In another bowl mix eggs, melted butter, milk and water
- Combine wet and dry ingredients without overmixing
- Make the waffles in the hot iron
- Serve with yogurt and berries!
