Here’s my idea of fast food. This meal comes together in under 2 minutes – the time it takes to toast your baguette slices. I’ve purposely left the bruschetta topping simple so that the splendid flavor of summer ripe tomatoes may shine. As much as I love basil, I was looking for a more delicate bite. If you’re not keen on raw onions, by all means, leave them out. The tomato and goat cheese combo alone is completely satisfying.

Ingredients
- 16 baguette slices
- 3 medium tomatoes, finely chopped
- 5 oz. chèvre – any flavor
- 1 Walla Walla onion, minced
- sunflower or olive oil
- salt and pepper to taste
Instructions
- Toast the baguette slices (or if your grill happens to be on you can grill them). Meanwhile stir together the chopped tomatoes, onions, a splash of oil and salt and pepper to taste. Spread each piece of toast with the goat cheese and top with the tomato & onion mixture. Serve alone as a light lunch, as an appetizer, for dinner with a side salad or as a yummo snack.
