Lemon Ginger Honey Tea

Make this when you feel something coming on:  a scratchy throat, stuffy nose, fatigue, aches, etc.  Lemon offers a nice hit of vitamin C, while the ginger and raw honey are immune boosters.  You can always go old school and add a shot of whisky for a nice twist on a toddy.  Simeon likes to add raw garlic to the brew – bold!  I prefer to save my raw garlic for my salad dressing.  I’m never without a jar of this honey in my kitchen – good stuff.

LEMON GINGER HONEY TEA

  • 1 tablespoon grated ginger
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon honey

Add grated ginger to a small two cup teapot with a fine mesh strainer.  Or you may infuse a small pot of boiling water (2 cups) with the ginger and strain into mugs using a regular kitchen strainer.  Stir in lemon juice and honey to taste.
