Baked Feta and Tomatoes, Corn Salad, Zucchini Pasta, Red Cabbage Salad
I get a bit panicky this time of year when the window of opportunity to cook with local summer produce begins to dwindle. We wait soooo long for ripe corn, juicy red tomatoes, crisp bulbs of fennel and oodles of other goodies. This week I’ll highlight a few of these items that won’t be sticking around forever.
