The "Good" Dressing | Print |
(this is what my son calls the vinaigrette I frequently make)
Ingredients
- ¼ cup rice vinegar (could also use apple cider vinegar, white wine vinegar, balsamic, etc...)
- 1 large garlic clove pressed through a garlic press (the taste is much different than mincing the garlic - more subtle and not overpowering like biting into a piece of raw garlic)
- 1 teaspoon dijon mustard
- 1 teaspoon maple syrup
- pinch of salt
- freshly ground pepper
- ¾ cup olive oil (or less, depending on your taste)
Instructions
- Whisk together all ingredients except the oil. Once everything is combined whisk in the oil in a thin stream – allowing the dressing to emulsify.
