The “Good” Dressing

The "Good" Dressing

(this is what my son calls the vinaigrette I frequently make)
Ingredients
  • ¼ cup rice vinegar (could also use apple cider vinegar, white wine vinegar, balsamic, etc...)
  • 1 large garlic clove pressed through a garlic press (the taste is much different than mincing the garlic - more subtle and not overpowering like biting into a piece of raw garlic)
  • 1 teaspoon dijon mustard
  • 1 teaspoon maple syrup
  • pinch of salt
  • freshly ground pepper
  • ¾ cup olive oil (or less, depending on your taste)
Instructions
  1. Whisk together all ingredients except the oil. Once everything is combined whisk in the oil in a thin stream – allowing the dressing to emulsify.
