This yellow globe or storage onion is perfect for any dish. It has a complex flavor, much more so than the summer white onion. Onions need to be kept weed free all season, then they are harvested on a dry day, taking care that the bulbs are not sunburned. They are then hung to dry, or stacked in wooden crates, with plenty of ventilation.

These Organic Yellow Onions are grown by both Pete's Greens of Craftsbury, Vermton and George of Dog River Farm in Berlin, Vermont

When cooked, yellow onions caramelize very well. They turn a rich brown and become much sweeter and milder. These onions should be stored in a cool dry place.
