This flavored Chevre is made from the very white milk of Nigerian Dwarf Goats. These small animals have an exceptionally smooth and creamy milk that is perfect for making Chevre. Even just a month before kidding season, when the goats are dried off, the butterfat content of the milk is at 9%, which is wonderfully high for cheese making. This blend is flavored with dried thyme and lemon rind for a very refreshing and light flavor that compliments this fresh cheese beautifully.
Willow Moon Farm is located in Plainfield Vermont, near the capital city of Montpelier. Sharon Peck and her daughter Kim have been milking their prized herd for years, selling fresh goats milk. They began the art of cheese making in June and are off to a great start. They lovingly manage their herd (the goats are like their children!) but this cheese is not Certified Organic.
This Chevre is made with goats milk, starter, Thyme, Lemon Rind, a small amount of vegetable-based rennet, and a small amount of kosher salt. Kim uses local, organic or home-grown ingredients in her cheeses whenever possible.
