Zucchini seems to be the brunt of many jokes in the vegetable world. We've heard there are ordinances in some communities forbidding the overgenerous gifting of Zucchinis to neighbors, friends, relatives, near relatives and anyone else who is unlucky enough to come by. But really, it is a wonderful vegetable when small, tender and sweet.
Sautéed, breaded and fried, or grilled with a little sea salt, zucchini has a wonderful nutty flavor. Try shaving with a vegetable peeler to make 'zucchini noodles,' lightly sautee and toss with some cheese, salt, pepper and a spritz of lemon juice.
Store in a plastic bag in the refrigerator.
