By polishing the brown rice slightly they remove some of the bran and reduce the phytic acid present in the bran, a compound that inhibits the absorption of zinc, iron, and, to a lesser degree, calcium and magnesium.

Because this is a fermented product - it is a very healthy alternative to those looking for a dairy substitue... and delicious too.
