To make a perfect dressing for a tossed green salad, soak finely chopped Shallots in a small amount of balsamic vinegar. Then toss with the greens. Heaven. Also delicious sauteed for a sweeter, more mild shallot flavor.
Store in a cool, dark, dry place.
