Joe roasts the bones at 375 for two hours along with a mirepoix and tomato paste. Then simmers for 3-4 hours. Makes the whole place smell like roast beef. Yum!
Joe does not use msg, or any other type of flavor “enhancer”. It just takes time to do it right and start with quality local ingredients.
This soup stock is low in sodium and only contains 6 ounces of salt for 10 gallons of finished product. That is less than a 10th of an ounce per 24 oz container. Most store bought soup stocks are much higher in salt as that is where most of their flavor comes from.
Use this flavorful stock as the base for any soup, stew or gravy.
Keep refrigerated, or freeze for later use.
