Buckwheat is naturally without gluten, but this flour is milled in the same facility as wheat so there may be slight contamination with wheat for those who are very sensitive.  This variety is a Japanese, black hull, grown in Benedicta, ME.

This buckwheat flour is a beautiful grey with dark speckles throughout.  The texture is not as refined as what you might find commercially which it adds a unique visual element, flavor and chew.

This buckwheat flour is great for pancakes, quick breads, crepes and more! It can be used as a substitute for wheat flour, but will result in a slightly more dense outcome if not mixed with other flours. Try a combination of buckwheat and cornmeal for your pancakes, add some fresh blueberries and you'll never go back.
