Hooray! Carrots are back and fresh from the field with the beautiful greens still attached. Tender, juicy and slightly nutty in flavor they bring a taste of true summer.
These early carrots are not as sweet as the late ones that have been touched by the frost, but there is a fresh earthy flavor to them that is equally delightful. Of course, since these are grown locally they will taste like candy compared to the west coast ones.

Remove the greens and enjoy fresh or lightly steamed topped with butter and a sprinkle of salt.
Store in a plastic bag in the refrigerator. Store separately from apples, pears, potatoes and other fruits and vegetables that emit ethylene gas as their sweetness will be compromised.
