Who would have thought we could really grow sweet potatoes in Vermont. Their beautiful vibrant orange flesh is sweet and delicious.
So flavorful they don't need much to prepare them. Try them roasted whole, or cut up and roasted with other root vegetables, salt, pepper and butter.
Their flavor is so sweet it could suffice as dessert! Or just use it in place of pumpkin in a pie.
Store in a cool, dark place.
