It takes real skill to store carrots through the winter, and if done right they are as crisp and sweet as the day they were picked. Try a taste test of the various colors of carrots to detect the subtle flavors present in each. Consistently crunchy, and varying degrees of sweetness, peppery, and earthy flavors.
Enjoy these tasty carrots fresh on their own or grated into a slaw or green salad. To bring out their sweet side, lightly steam and top with butter, or roast with olive oil and salt.
Store in a plastic bag in the refrigerator. Store separtely from apples, pears, potatoes and other fruits and vegetables that emit ethylene gas as their sweetness will be compromised.
