These beautiful Italian style eggplants are grown by Justin Rich of Burnt Rock Farm. Their dark purple, tear dropped shaped fruits surround a creamy white and slightly spongy interior flesh and slightly sweet in flavor.
These eggplants are harvested before many seeds develop and are thus less bitter than a very large eggplant. Picked fresh, and delivered to you with in a few days for the best taste. They are fleshy in texture and so makes for a great substitute for meat in a vegetarian dish.
