Radicchio is a bitter 'green' with a touch of spice. The leaves are actually a dark red-magenta with a white base and white veins. It grows in a head form similarly to cabbage with loosely wrapped leaves.

There are many ways to serve it; raw in salads, braised or grilled. To mellow the bitter flavor, try radicchio braised or grilled. This strong flavored vegetable pairs well as an accent with other strong flavored greens like arugula, aged cheeses and dried fruits.
