These garlic heads average about 6 cloves per bulb and while smaller than the typical store bought make up for size with flavor. Typically there 3 bulbs per 1/3 pound portion. Early in the season these are green and best used right away. As the season progresses they will be dried and cured so they will store well.

Chop and use fresh in dressings and seasonings, or roast the entire bulb in the oven for a sweet and creamy accent.
Store in a cool, dry, dark place. Avoid plastic bags as it will hold moisture and encourage mold, if you want to keep it in a container, paper bags are ideal.
