Try them roasted in soups, sauces, or make your own chiles rellenos. To easily remove skin from roasted chilis, place chili in a plastic bag immediately after removing it from the heat. Allow to cool in the bag for a few minutes, then remove and peel away the skin.
Store in a plastic bag in the refrigerator, or freeze already roasted peppers for later use.
