Onions need to be kept weed free all season, then they are harvested on a dry day, taking care that the bulbs are not sunburned. They are then hung to dry, or stacked in wooden crates, with plenty of ventilation.

Yellow onions are have a strong flavor in their raw state that mellows when cooked. They are excellent when caramelized, they turn a rich brown and become much sweeter and milder.
These onions should be stored in a cool, dry, dark place.
