The fennel bulb is white, which fades to green stalks similarly shaped to celery, which extend to green featherlike fronds. Depending on the variety, fennel can grow up to 5 feet tall.

Fresh fennel bulbs are delicious sliced and sprinkled with salt, black pepper and drizzled with a balsamic vinegar and olive oil. The featherlike fronds are a great addition to a salad. Try slicing and roasting or caramelizing the bulbs for a more mild licorice flavor.
