Peas like these will only be available for a short time because the plants start to fade in the heat. The shell is not edible, but the peas inside are deliciously firm, round and sweet.
These peas are grown organically, however, cannot be certified organic because they are grown in close proximity to a sod field.
Enjoy these peas raw or lightly cooked. Shell them from the pod and eat raw in a salad. If you enjoy dairy or poultry, add some cheese and grilled Chicken and you have a perfect lunch at the beach or a light dinner after a hot day on the water. If that sounds too ambitious, pour a glass of white wine, shell and eat them as you sip.
Store in a plastic bag in the refrigerator in shells, or shell and store for a couple of days. The shelled peas freeze well in a plastic bag.
