Jacob sources his sausage trim for our sausage from Snug Valley Farm - our pork supplier in Hardwick Vermont. Ben at Snug Valley raises his pigs outdoors on pasture supplemented with grain and whey. This makes for very flavorful and nicely textured meat.
Each Season Jacob changes the recipe slightly so presently:
Artisan Meats of VT Sunshine Brats made with locally grown pork, "Sip of Sunshine IPA" from Lawson's Finest Liquids, and garlic scapes from Bear Roots Farm! The flavor is subtle and satisfying.
Brawurst is such an easy sausage to like. Have them with mashed potatoes, on a cheese plate with some bold red wine, or of course with your favorite beer!! These mildly flavored sausages are also a hit with children - and a bit of ketchup is perfect!
